Gừng nạo vỏ, băm nhỏ. Cá trê làm sạch nhớt, bỏ ruột và vây cá, rửa sạch rồi dùng dao khứa vài đường lên thân cá cho chiên nhanh giòn. Dùng khăn thấm khô nước.
Đun nóng 50ml dầu ăn (không cần nhiều dầu tránh lãng phí), cho cá vào chiên nhỏ lửa cho đến khi chín vàng giòn thì vớt ra để ráo dầu. Lưu ý, lúc vừa mới thả cá vào tránh trở cá ngay vì sẽ làm tróc lớp da cá dính vào chảo nhé!
Trong chén nhỏ, trộn đều nước mắm, đường, nước cốt chanh, tỏi băm, ớt băm và gừng băm. Khi ăn có thể chấn hoặc dội nước mắm gừng lên trên thịt cá trên nhé!
